Pomegranate Prosecco Punch

Caitlin and I spent some time in the mountains brainstorming and dreaming about business and made this refreshing spring-time prosecco punch. We made ours by the glass but you can also make a whole pitcher (recipe below) to share with a bigger group. I made this for a party a few weeks ago and it was a crowd pleaser! Here’s a little video Caitlin did to show how to make this bubbly cocktail…enjoy!


Pomegranate Prosecco Punch
(adapted from Bon Appetit’s Pomegranate-Champagne Punch)
Serves 12

Simple Syrup (1/2 cup water, 1/2 cup sugar)
2 bottles of prosecco (we love Lamarca!)
1 1/2 cups white rum
1 1/4 cups pomegranate juice
1 large lemon, thinly sliced
Pomegranate seeds
Fresh mint leaves

1. Make the simple syrup: Bring 1/2 cup water and sugar to boil, stirring until sugar dissolves. Simmer 5 minutes. Cool syrup completely.
2. Combine prosecco, run, and pomegranate juice in pitcher.
3. Add simple syrup to sweeten to taste.
4. Mix in lemon slices, pomegranate seeds, and mint leaves. Add ice to pitcher and enjoy!
